Why is Mauviel Copper Cookware so popular? Professional chefs and serious home cooks agree that copper is the best material to cook with because it conducts heat quickly and evenly. All types of food, including sauces, can be cooked with total temperature control and precision, without the usual hotspots, and as a result, your dishes will turn out perfectly.

Because of this, authentic French copper cookware is the most popular of all the cookware sets and Mauviel is tops on the list of what's available on the market today.

Why should you choose Mauviel Copper Cookware over the others?

Copper is prized for it's ability to transfer heat quickly, distribute it evenly, and then cool off quickly. Mauviel products are manufactured in France, where cooking is not taken lightly, and they appreciate the value of quality cookware and strive to make theirs the best that you can possibly get, and at a reasonable cost.

They are globally known for making the finest cookware, and the quality of Mauviel sets the standard for others to follow due to it's legendary performance and beauty. You also know that when you buy from Mauviel, you have bought for life because all of their cookware is guaranteed for life.

Does it matter if I have gas or electric appliances?

Your copper cookware from Mauviel performs with electric or gas ovens and stovetops and is completely safe for both. You'll be amazed at the remarkable control that you have by cooking with copper on your stovetop and what a serious difference it will make on how your dishes and sauces turn out. You'll find that sauteeing and frying is so much easier with copper's ability to heat up fast and uniformly.

When you aren't cooking with your copper cookware, you can display it proudly in your kitchen. A quick polish occasionally with a copper cleaner will keep your copper pots and pans gleaming beautifully, and hanging your set from a copper pot rack creates a stunning, functioning display of artwork in your home.

These two volumes present the results of studies and debates given at the 3rd Late Roman Coarse Wares, Cooking Wares and Amphorae Conference, held at Parma and Pisa in March 2008. They follow the LRCW1 (Late Roman Coarse Wares, Cooking Wares and Amphorae in the Mediterranean. Archaeology and Archaeometry edited by J. M. Gurt i Esparraguera, J.Buxeda i Garrigos and M.A. Cau Ontiveros, BAR International Series 1340, 2005) and LRCW2 (Roman Coarse Wares, Cooking Wares and Amphorae in the Mediterranean. Archaeology and Archaeometry edited by M. Bonifay and J.-C. Treglia, BAR International Series 1662 (I-II), 2007) Volumes and a few mid-term meetings of the Standing, Scientific and Organizing committees of the LRCW research network. Starting in March 2002, when the first Conference was organized in Barcelona, a great effort was made to ensure the continuity of these international meetings held every three years. Each time the results of more and more extended research are presented. Increasing numbers of papers document the success of this initiative: LRCW1 and LRCW2 included 48 and 73 papers respectively; in present volumes there are 105 papers. As at Barcelona and Aix-en-Provence, Marseille and Arles, many archaeologists (230 of 303 enrolled) took part in the Parma-Pisa Conference, coming from 25 different countries: 50 papers and 104 posters were presented. J.W. Hayes introduced the sessions which were summarized by M. Bonifay. The themes treated were: 1) production centres; 2) pottery distribution and consumption; 3) forms, function and contents; 4) regional contexts: Adriatic area; 5) the eastern Mediterranean; 6) Rome and Ostia; 7) Tyrrhenian Italy; 8) the western Mediterranean.
